Happy St. Patty's! We're getting ready to rock all things green & the girls can't wait to try and catch a leprechaun.
Today I've got a quick, easy & healthy Saint Patrick's day treat that your kiddos are sure to love! Sure, I absolutely love donuts, cookies and cupcakes as much as the next person but I sometimes feel like we could use a little healthy crunch in our holiday. This has become a little St. Pat's tradition for me to make every year - and yes - it's pairs great with a side of green pancakes or a mint milkshake ;)

This Rainbow fruit recipe really doesn't require a "recipe", it's just chop, arrange and add a "cloud". The girls LOVED it for snack and I'm pretty sure it's going to go onto the usual snack rotation. 
For fruit - I picked strawberries, mandarins, pineapple, green apple, blueberries and blackberries! Some great substitutions would be red raspberries, green grapes or purple grapes, too! For the "cloud" in the middle of the rainbow, I used whipped cream. If you want to go a little healthier, a yummy vanilla yogurt would work, too!
