Cinco de Mayo Eats & Drinks! May 05, 2016 03:30

Happy Cinco de Mayo!
Need some last minute menu ideas? We've got you covered!
Gentry's Closet Margaritas
1st up...Margaritas! I learned this recipe in college and it's probably still being passed around dorm parties all across the country...but it's fool-proof and super yummy!

You'll need:
- A can of limeade
- A blender
-Ice
-A beer (any light beer really works)
-Tequila
Put frozen limeaid in blender, add tequila and fill to top with ice. For measuring the tequila - I usually do about 1/2 a can (use the limeade can). You can use anywhere from 1/2 - 1 can but as the saying goes...1 tequila, 2 tequila...mama needs a nap! So I usually just stick with a 1/2 can ;)
Blend.
AFTER, I repeat, AFTER you have blended the other ingredients together, add the beer. Remember how I said the recipe was fool proof? It only is if DO NOT PUT the beer in and blend. Enjoy!
Gentry's Closet Guac Salad
2nd: Avocado Salad - this is a little twist on a traditional guac. These are approximate measurements because I love cooking but I'm not big on following the recipes.
Mix together: One fresh cut corn on the cob, a few medium sized tomatoes, 1/4 of a large red onion, 1-2 avocados, 1/2 can black beans, a small handful cilantro, green onions, and 1/2 a jalapeno. Chop all items and mix in a large bowl. Season with salt & garlic powder. Add chips, a pitcher of margs and you are set!
