Are you meal planning for the week? Trying to plan out meals & snacks for kiddos (that they will actually eat) can sometimes be a challenge. These banana chocolate chip muffins are given two thumbs up by my girls & are the perfect breakfast on the go or easy snack! Prep them ahead of time and you are ready for the week!
*I have been using this recipe for about 5 years now (with some tweaks). The original recipe didn't call for whole wheat flour...or chocolate chips but they tend to make everything better. I'm sorry to say, I don't know who the original chef is. If this is your recipe, please email me and I would be more than happy to give credit where credit is due
Banana Chocolate Chip Muffins:
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 3/4 cup sugar (I have even done a half cup sugar and they are still a hit)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour (I mix half all-purpose flour and half whole wheat flour)
I like to mix everything in my Kitchenaid Mixer (that way the bananas are blended smooth and there won't be chunks of banana) Preheat the oven to 350°F. Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into muffin tins. Bake for 20-25 minutes. Cool on a rack.
